Loaded Potato Puffs




3 C. leftover mashed potatoes (they should already be seasoned with butter, salt and pepper)
1/4 C. diced onion
2 T. real bacon bits
1/3 C. shredded cheddar cheese
1 tsp. parsley
1/2 tsp. garlic powder
1 egg, beaten
1/3 C. all purpose flour
oil for frying 

In a bowl, combine the potatoes, onion, bacon bits, cheese, parsley, garlic powder and beaten egg. Stir in the flour and combine well. Dust a plate with a little flour and then using floured hands pinch off some of the potatoes and gently roll them into a ball (about golf ball size). Place each ball on the floured plate. Heat 1" of oil in a frying pan to 350 degrees. Once heated, gently place each ball in the oil and fry for 3-4 minutes then turn and fry for 2-3 more minutes or until golden brown. Drain on paper towels. Makes approx. 12-14 pieces.
