2 C. leftover mashed potatoes
3 T. flour
1 T. chives
2 strips of bacon, cooked and crumbled
1/2 C. finely shredded cheddar cheese
1 egg
1 C. Italian bread crumbs
oil for frying
Method
i loooooooooove this recipe:) i find myself making these for breakfast or dinner. A simple recipe with tremendous flavor and personality. Its crispy, crunchy and yummy!... So to prepare this recipe you nee first to heat the potatoes in the microwave about 30 seconds.
Second stp : Now after all that you need now to combine the flour into the potatoes. and next you need to add in the chives, crumbled bacon & then cheese, make sure to combine well. Step 3 : Now take a separate small bowl then beat the egg. After that put the bread crumbs in a small bowl. Step 4 : At this step all what you need now to do is to heat oil in a deep fryer or about 2" deep in a heavy skillet to 375 F . Step 5 : Now after you finished the last step make sure to use you hands and take a spoonful of the potatoes then roll into a ball after that dip in the egg then the roll in the bread crumbs ( this recipe makes approx 14 balls) . Now you need to put on a plate and do the same with remaining potatoes. Finally step now make sure to gently drop into the hot oil & fry between 2 to 3 mins (till golden brown). Serve and enjoye !!!
